    Coffee Can Yeast Bread

    2 empty (1#) coffee cans, clean
    1 (1/2 oz.) package dry yeast
    1/2 c. milk
    1/2 c. vegetable oil
    1/2 c. sugar
    1 t. salt
    4 c. sifted all purpose flour, divided
    2 eggs
    Yields: 2 loaves

    Recipe



    Preheat oven to 375 degrees.

    In small bowl,dissolve yeast in water.

    Grease inside of coffee cans.

    Then, in saucepan, combine milk, oil, sugar and salt.
    Heat until sugar dissolves.
    Cool to lukewarm.

    Place 1-1/2 c. flour in large mixing bowl and stir in
    yeast mixture.

    Add milk mixture and beat until smooth and elastic.
    With spoon, divide dough equally into the coffee cans.

    Cover with plastic lids or plastic wrap.
    Let rise until dough almost touches lid, about 1 hour.
    Remove lids.
    Place cans on a baking sheet.
    Bake for 30 to 35 minutes.
    Cool 10 minutes before removing from can.
