Chocolate Cake for a Diabetic
2 eggs
non caloric cooking spray
1-1/2 c. flour
1/4 t. vanilla extract
1 c. 2% milk
1/2 c. unsweetened cocoa
1-1/2 t. baking soda
2/3 c. safflower oil
1/4 c. DIABETISWEET
Preheat oven to 350 degrees.
Spray a 13x9 inch cake pan with non caloric cooking spray.
Lightly beat 2 eggs (until just mixed.)
Combine beaten eggs and other ingredients in a large bowl.
Mix until just blended (do not overmix).
Pour into a greased cake pan.
Bake for approximately 45 minutes (until an inserted knife comes out clean.)
Makes 24 servings.
NOTE: serving= 1/2 starch exchange and 1fat exchange.
