Orange Butter

Orange Butter
1 large orange zested with vegetable peeler
or zesting tool
1/4 c. sugar
1.50 sticks butter, cut into chunks
1/3 c. freshly squeezed orange juice
Put orange zest and sugar in the bowl of a food processor
or blender and process until the peel is finely chopped.
Add the butter and the orange juice and process to blend well,
stopping machine and scraping the sides of the bowl if necessary.
The orange butter should be light and fluffy with an orange color.
The butter can be stored if well sealed in the refrigerator for a couple of
days, or frozen.
