Best Ever Apple Pie
2 c. unbleached flour
1/2 t.salt
2/3 c. shortening
6 T. cold water (or 7)
2/3 c. sugar (or 3/4 cup)
2 T. unbleached flour
3/4 t. ground cinnamon
Dash ground nutmeg
6 (to 8) medium apples peeled and sliced
equal to 7-1/2 cups.*
1/4 c. dried cranberries or cherries,
figs or raisins
1 T. lemon juice (opt.)
1 T. butter
Milk

For pastry, stir together the 2 cups flour and salt in amedium mixing bowl.
Using a pastry blender, cut in the shortening until the pieces are size of small peas.
Sprinkle 1 T. of the cold water over part of the mixture; gently toss with a fork.
Push to the side of the bowl.
Repeat, using more water, 1 T. at a time, until all of the mixture is moistened.
Divide the dough in half. Form each half into a ball.
On a lightly foured surface, flatten one ball of dough with your hand.
Using a rolling pin, roll the dough from the center to the edge, forming a circle about
12 inches in diameter.
Transfer the pastry to a 9 inch pie plate.
Ease the pastry into the plate, being careful not to stretch it.
Roll out the remaining ball of dough into a 12 inch circle.
For the filling, stir together the 2/3 c. sugar, 2 T. flour,
cinnamon and nutmeg in a large bowl.
Add apples and if desired, dried fruit; toss to coat.
If the apples lack tartness, add lemon juice if desired.
Transfer aple mixture to pastry-lined pie plate.
Trim bottom pastry to the edge of the plate.
cut butter into small pieces; place on top of fruit.
Make decorative cut-outs in the top crust to allow steam to escape.
Place top crust on the filling.
Trim top crust to 1/2 inch beyond the edge of plate.
Fold top crust under the bottom crust; seal and flute as desired.
Brush top crust with milk and sprinkle lightly with sugar.
Cover edge of pie with foil to prevent over browning.
Bake in a 375 degree oven for 30 minutes.
Remove foil.
Bake for 20 -25 minutes more or until the top is golden.
Cool on a wire rack.
Cover and refrigerate any leftovers and use within 2 days.
Makes 8 servings.
NOTE: * Apples that could be used are: Cortland, Granny Smith, Jonathan or Rome Beauty.
