Chunky Tomato Vinaigrette Sauce
Chunky Tomato Vinaigrette Sauce
3 tablespoons red wine vinegar
2 tablespoons balsamic vinegar
2 tablespoons butter melted and cooled
1/2 teaspoon sugar
1 1/4 pounds tomatoes peeled seeded and chopped about 1 1/2 cups
1/4 cup minced green onions
1 tablespoon chopped fresh basil
1 teaspoon minced fresh thyme
1/4 teaspoon dried oregano
dash of pepper
Combine vinegar's, butter and sugar in a small bowl. Whisk until well
blended. Place tomatoes, onions and remaining ingredients in a large bowl.
Gently stir in vinegar mixture. Let stand 1 hour before serving. Serve over
hot or cold pasta.
Makes 2 cups
