    My Banana Bread

    4-1/2 c. flour
    3 c. sugar(I like brown sugar)
    3 t baking powder
    2 t. baking soda
    2-1/2 t. salt
    1 1/2 c. canola oil
    1-1/3 c buttermilk (or milk soured with 1 T. vinegar added)
    6 eggs
    3 c. bannas (Mashed)

    Mix sugar, oil, buttermilk, and bananas together. Mix flour, soda, baking powder, salt together in a seperate bowl. Add dry ingredients to the moist ingredients and mix well. This recipe makes 4 large or 6 small loaves of banana bread. So grease pans accordingly. Fill pans about 2/3 full. Bake in a 350 degree oven for about one hour for smaller pans and 1 hour 15 minutes for the larger pans. Ovens vary so it may take longer. Use a toothpick inserted into the center of the bread, if it comes out clean the bread is done.

    Also, if this recipe is too much for your family you can cut it in half very easily.

    Note:
    These freeze very well when properly wrapped with saran wrap and foil. Also you can add chocolate to it for chocolate banana bread. Use 1/2 c. cocoa and an extra 1/3 c. oil when making the batter. You may also make chocolate chip banana bread by flouring the chips and adding at the last minute. Enjoy!!!
