    10 Minute Pistachio Brittle

    List of Ingredients




    1 c. sugar
    1/2 c. light corn syrup
    1/8 t. salt
    1 to 1-1/2 c. pistacio nutmeats
    1 T. butter
    1 t. vanilla
    1 t. soda

    Recipe



    Combine sugar, syrup, and salt in a 2 qt. casserole or mixing bowl. Microwave at high for 5 minutes. Stir in pistachios. Microwave 2 to 5 minutes, stirring after 2 minutes and then again after 4 minutes. You are looking for the mixture to lightly brown. When it has lightly browned, stir in butter, vanilla, and soda until light and foamy.
    Spread to 1/4 in thickness on well buttered cookie sheet.


    Note: If you wish the brittle thinner, cool mixture on cookie sheet for 3 to 5 minutes. Lift from the sheet and pull or stretch it until it is to your desired thickness.
