Microwavable Peanut Brittle
1 1/2 c. raw peanuts
1 c. sugar
1/2 c. light corn syrup
1/8 t. salt
1 t. butter
1 t. vanilla
1 t baking soda
In a 1 1/2 qt. casserole stir together peanuts, syrup, and salt. Cook for 8 minutes on high. Stirring well after 4 minutes. Stir in butter and vanilla. Microwave 2 minutes longer on high. Add baking soda and quickly stir until it is well blended. it will be light and fluffy. Immediately pour into a lightly greased baking sheet, spread out very thin. When cool break into small pieces. Store in an airtight container. This makes about 1 pound.
