    Scotch Eggs

    This is much easier than it sounds and it is a great way to use up leftover hard boiled eggs.

    1 pound package breakfast sausage
    1 egg
    1/2 c. milk
    Bread crumbs
    Deep fat for frying

    Remove shells from hard boiled eggs. Take a nice patty of sausage and wrap it around the egg. This may take a little practice to guess the amount. But, not to worry just keep adding until it is covered. The egg must be totally covered for this to work out right.

    In a bowl mix the egg and milk. Coat the sausage covered egg in this, then roll in the breadcrumbs. Deep fry this in 375 degree oil until it is golden brown.

    These are so very good. My kids used to grab them as fast as I could make them.
