Fresh Shrimp Salad
2 lbs fresh shrimp. Boil 7 minutes with 1 t. salt and 1 t. caraway seed. Let cool in water. Remove shell and devein the shrimp. Cut the shrimp once or twice depending on the size of the shrimp. Add:
2 c. cut celery
2 hard boiled eggs sliced
1 t. chopped onion
1/2 t. salt
dash of pepper
Shortly before serving add 1 pint of Mayonnaise Dressing(in the salad and dressing category) mix well. Serve on individual lettuce leaves or put it into a bowl to serve.
Make sure you garnish with tomato wedges and hard boiled egg slices. Sprinkle with paprika. A ripe olive on top and potato chips served along side with warm rolls and you have a complete meal.
