    Liver Loaf

    1 lb. liver (any kind)
    1 T. chopped onion
    1 egg beaten well
    1 T. chopped celery
    1/4 lb. bacon
    1 c. bread crumbs
    1 T. chopped parsley
    salt and pepper to taste

    Cover liver with boiling water and let stand for 10 minutes.
    Now drain the liver and dry it off. Mince the liver, bacon, onion. Combine all ingredients and mix thouroughly. Pack into greased loaf pan and bake 1 hour at 350 degrees. This is excellent for sandwiches and hors d'oeuvres. This is basicly liver sausage but without the casings.
