    Au Jous for Italian Beef

    Italian Au Jous

    Take all drippings from the bottom of the pan and strain them. Place them in the freezer and defat them also. Now place the cleaned up juices into a sauce pan of about 2 quarts and add three cups of water and 2 boullion cubes to this. Bring to a boil. After this has boiled place your beef into the liquid. This is a meal fit for a king. Serve the sandwich with crusty bread that the edge has been dipped into the Au jous and it is magnifico.

    Note: After you have eaten all your yummy beef you should strain the au jous and freeze this. It is a perfect base to make minestrone soup with.

    All you need to do is add:

    1 can tomatoes
    1 cup ziti pasta or even any noodle will do :o)
    1 can garbanzo beans
    1 can kidney or other bean of choice
    1 can veg-all

    Blend Au Jous and all other ingredients listed boil until pasta is done, if you need a little more broth to it add a cup of water or two with a boullion cube and you have minestrone soup.
