Meatballs with Vegetable Sauce
1/2 lb. veal
1/2 lb. pork
2/3 lb. beef
These meats all must be ground. If you have the means to do it at home I recommend grinding the three all together . Then do it two more times to make sure it is mixed well. If you buy it ground at the store you must mix it together very, very well. Now how to make the meal :o)
Mix with 1/2 c. applesauce, 1.2 c. moist bread crumbs, 1 egg, 1-1/2 t. salt, nd 1/4 t. pepper and form into meatballs. Brown on all sides until they are golden brown. Place them into a casserole and cover with a mix of vegetables...several carrots, pearl onions, celery, green peppers, cut. Add 2 c. tomatoes and drippings from the pan in which the meat was browned.
Bake at 350 dgrees for 1 hour. If the vegetable sauce is too thin, thicken it with a little flour or cornstarch.
