My Swiss Steak
1 1/2 lbs round steak, cut into four pieces.
3 T. flour
1 1/2 t. salt
1/2 t. pepper
1 T butter
1 T. oil
1/2 c. hot water
1 c. diced celery
1/2 c. chopped onions
Pound, flour, and season meat. On both sides! Brown meat in shortening and butter combined. Add water, celery, and onions. Cover and simmer for 2 hours until meat is tender.
Or this may be placed in a 325 degree oven for 2 hours instead of simmering on top of stove.
Variation:
Add 1 1/2 cs.tomatoes and 1 can (4 oz.) mushrooms instead of water. Bake and serve over noodles, rice, or serve with mashed potatoes.
