    Recipe Introduction

    Almost Level 1 ~ Pro/Fats ~ These are the best Somersized brownies I've had! I'm adding information on the chocolate I use for these brownies (and any recipe calling for a larger quantity of chocolate). I have finally found a supplier of Peter's Chocolate and this is where I buy it. I buy it 10# at a time, but you can also buy it by the pound. This chocolate is the best I've tasted - but please know that I'm by no means a "chocolate expert". http://www.jena-maries.com/?page=product_catalog then select "sugar free chocolate". I use the sugar-free milk chocolate. I've ordered twice from Jena Marie and I belong to a couple of her newsletter groups. She's a good 'company' to do business with.

    List of Ingredients

    1 stick (1/2 cup) butter, (plus 1 tablespoon more for greasing the pan)
    16 ounced (1 pound) sugar free milk chocolate, coarsely chopped
    5 large eggs, at room temperature, seperated
    1 tablespoon Sugar Not (sweetener equal to 1/2 cup sugar)
    2 teaspoons pure vanilla extract
    1/2 teaspoon salt

    Recipe

    1. Preheat over to 350 degrees. Grease a 9x13" Pyrex glass pan with the 1 tablespoon of butter.

    2. In a metal bowl set over a pot of simmering water (or a double boiler), melt the chocolate and the stick of butter. Stir occasionally until smooth and creamy. Remove from heat.

    3. In another bowl, beat the egg holks together with the sweetener and vanilla, stopping to scrape the sides of the bowl once or twice, for about three minutes.

    4. In a third bowl, beat the egg whites with the salt until stiff.

    5. Slowly stir the melted chocolate in the egg yolk mixture, adding just a little chocolate at a time to "temper" the eggs to keep them from cooking.

    6. Fold in the egg whites.

    7. Pour the batter into the buttered pan and bake it the center of the oven for 35-40 minutes.

    8. When brownies are cool, cut into squares.

    9. Store brownies in refrigerator.

    * These are good topped with a scoop of sugar free ice cream, and drizzled with sugar free caramel or chocolate sauce.
