    List of Ingredients




    First make the meatballs. Mix:

    1 lb. ground beef (or ground lamb, which I can't find locally)
    1 egg
    * 1/4 cup Keto crumbs (or crushed pork rinds or almond flour or omit entirely) (* Deb - I used 1/4 cup grated Parmesan)
    1/2 medium onion, chopped
    2 cloves garlic, minced
    1 teaspoon dried parsley
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1/4 teaspoon allspice
    dash cinnamon
    1/2 teaspoon hot pepper sauce


    To the same skillet, add:

    1/2 medium onion, sliced thinly. Saute 3 minutes. Then add:

    1 pound fresh green beans
    1 (14 ounce) can diced tomatoes
    1/2 teaspoon basil
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1/4 teaspoon cayenne
    1/4 cup water

    For meatballs:

    Form into small meatballs and fry in 1 T. butter + 2 T. olive oil. Remove from skillet.

    For the green bean portion:

    Stir well to combine. Put the meatballs back in and mix gently. Turn the whole thing into a deep casserole or Dutch oven. Bake, uncovered, at 350 for 1 hr.

    The green beans we used were kind of big and tough, and didn't cook all the way in 1 hour. I think I would parboil them for 5 min. next time. If you're using smaller, tender green beans, they should be fine as is.

    * Deb’s notes: I made the meatballs exactly to recipe, using hamburger and subbing grated (powdery) Parmesan cheese for the Keto crumbs. I was out of frozen beans, so I used canned (I’ve read that canned French-cut are good here too). I used a large (28 ounce) can of Italian (flat, broad) green beans. Since I like a lot of sauce and veggies and I doubled this recipe - next time I will add an extra (14oz) can of crushed tomatoes and another (14oz) can of green beans, or the equivalent frozen beans. I also used crushed tomatoes instead of diced. I baked this in a large (11 x 17" roasting pan because I doubled it). My husband loved this recipe!
