Pork Chops in Rich Brown Gravy

    Source of Recipe

    Atkins Site

    Recipe Introduction

    Level 1 ~ Pro/Fat

    List of Ingredients

pork chops (use as many in a skillet as you can)
    onion powder
    garlic powder
    pepper
    salt
    1 small onion, thinly sliced
    olive oil
    1/2 C heavy cream

    Recipe

Season pork chops front and back with an abundance of the listed seasonings. Brown chops on both sides over medium high heat. Cover chops with sliced onion. Cover skillet tightly, turn heat to low, simmer 1 & 1/4 hours. Remove chops. Cook down all natural pan juice. It should reduce 1/3 to 1/2 of original liquid. Add cream and reduce 'til thick and brown. Add chops back in. Serve.

This tastes good over cabbage sautéed in medium low heat with butter.

    * Deb’s notes: These were delicious. You can omit the onions if you’d like. Next time I will not cook down the liquid before adding cream, hopefully I’ll get more gravy that way. I’d also like to try adding one can of table cream (it’s already condensed) instead of the fresh cream and see how that works. Also - I didn't need to cook my chops as long as the recipe stated.
