BROCCOLI – CAULIFLOWER CHEESE CASSAROLE

This is very delicious and the kids will love it. And it’s great for them. I ate this the other night for supper with my bbq turkey breast and it was awesome!
1 small head of cauliflower
1 small head of broccoli
½ cup fat free yogurt
1 cup of fat free shredded cheddar cheese
1 tsp. of dry mustard
2 tbsp. of fat free bread crumb
Pepper to taste
Break the cauliflower and broccoli into florets and cook in boiling water for 8-10 minutes, or until just tender. Drain well and transfer to a cooking dish that can go into the oven. Mix together the yogurt, shredded cheese, and mustard, then season the mixture with pepper and spoon over the cauliflower and broccoli. Sprinkle the breadcrumbs over the top and place under the broiler until golden brown. Serve this hot.
FOR ZUCCHINI LOVERS A DIFFERENT RECIPE
I tried this recipe once because like I said before my husband hates zucchini but I reatherly liked it a lot. Plus I don’t buy zucchini very often only to treat myself. I hope you like this dish.
3 large zucchini, thinly sliced
½ small red onion. Finely chopped
1 ¼ cups of tomato sauce
2 tbsp. chopped fresh thyme ( I used the powder and it still tasted great)
Garlic, salt and pepper
Recipe
Preheat oven to 375 F. Spray some ff. Pam in ovenproof dish. Arrange half of the zucchini and onion in dish. Spoon half the tomato sauce over the vegetables and sprinkle with some fresh thyme, then season to taste with garlic, salt and pepper. Arrange the remaining zucchini and onion in the dish on top of the sauce, then season to taste with more garlic, salt and pepper. Spoon over the rest of the tomato sauce and spread evenly. Cover the dish with foil, then bake for 40 – 50 minutes or until tender Garnish with springs of thyme and serve hot.
This is great for guests who are tired of the same old vegetable side dish.
