    Mini Meatloaf

    Recipe Introduction

    You can experient with different flavors of bbq sauce or add different seasonings, each time you make this.

    List of Ingredients

    2 lbs. ground beef, LEAN (cuts down on grease)
    1 medium onion, cut into chunks
    1 green bell pepper, cut in small pieces (optional)
    1 large egg plus a splash of milk, beaten
    1 cup plain bread crumbs (italian is nice)
    1 cup bbq sauce (Kraft Honey bbq is the best so far)
    extra bbq sauce for top of meatloafs (some other types of bbq sauces make the top crunchy, that's why I like Kraft).

    Recipe

    Preheat oven to 450 degrees

    Put ground beef into a big bowl.
    Put onion and green pepper in. (I microwave onion covered, for a few minutes to soften, before putting in bowl).
    In a seperate bowl- beat egg, with a splash of milk.
    Add egg to bowl.
    Add bread crumbs to the bowl.
    Mix with hands.
    Add cup of bbq sauce.
    Mix again.

    Brush a 12-muffin tin (1/2-cup each) with vegetable oil or extra-virgin olive oil.
    Use an ice cream scoop to help you fill meat into each tin.
    Top each meat loaf with a spoonful of extra sauce.
    Bake about 20 minutes.
