Sour Cream Cornbread

2 tablespoons shortening
1 cup self-rising cornmeal
1 8.5 oz can cream-style corn
1 8 oz carton sour cream
1/4 cup vegetable oil
3 large eggs -- lightly beaten
Heat shortening in an 8 inch cast iron skillet at 425 degrees for 5 minutes, or until skillet is almost smoking.
Meanwhile, combine cornmeal and remaining ingredients, stirring just until moistened. Remove skillet from oven; spoon batter into hot skillet.
Bake at 425 for 20 minutes or until golden
