    Hash Brown Potato Casserole

    Amount Measure Ingredient -- Preparation Method

    1 2 lb package frozen hash brown potatoes
    1 stick butter or margarine
    1/2 cup finely chopped onions
    1 can cream of chicken soup
    2 cups crushed corn flakes or Ritz crackers
    2 cups sour cream
    1 teaspoon salt
    1 teaspoon pepper
    1 8 oz package grated sharp cheddar cheese

    Pour frozen hash brown potatoes in a large shallow casserole dish to defrost.

    In a saucepan, melt butter. Add chopped onions, cream of chicken soup and sour cream. Remove from heat and add salt and pepper. Mix this mixture well with the potatoes.


    Top with grated cheese and then with crushed Ritz crackers.

    Bake at 350 for about 1 hour, or until hot and bubbly. Do not overbake.

    Note: This casserole may be divided in half and part frozen.
