Mamamoo's Buttermilk Biscuits

moo's Note - This recipe was given to me by Mamamoo. She hasn't used a recipe in years. She just begins throwing things in a bowl...and VIOLA! Biscuits! ~moo
Here are her instructions:
1. All feet under the table as soon as the biscuits go into the oven. Biscuits are best served HOT!
2. You must have 2-3 grandkids with their "helping hands" cutting out the biscuits. She has rarely made a biscuit in the last 35 years without some help from grandkids!
3. She prefers a smaller biscuit. Her old, and I do mean OLD, biscuit cutter is about 2 1/2 inches across.
4. This is her best guess.
List of Ingredients
2 cups flour
1 Tbsp. baking powder
1/2 tsp. baking soda
3/4 tsp. salt (she uses kosher)
1/3 cup shortening
1/2 - 3/4 cup buttermilkRecipe
Sift together the flour, bkg. powder, soda and salt. This is an important step, so NOT leave it out. Cut in the shortening till the flour is like coarse cornmeal. The flour must be coated, it wouldn't hurt if there were some pea sized bits. Add the buttermilk until you have the "right" consistancy. Add a little at a time, you can't take the buttermilk out! Do not overmix or you will have tough biscuits. It has to hang together.
Turn onto a floured board. Pat out about 1 inch think in a circle. Cut out biscuits with a biscuit cutter, being sure to call out for the grandkids to help!
Place on an lightly greased cookie sheet. Call the family to the table. Bake at 425 degrees for 10-12 minutes or until the biscuits are golden brown.
In our family, you must serve the biscuits with bacon gravy. The grands would have them no other way!
