Mom's Beef Barbecue
Source of Recipe
From the Kitchen of my mother, Pat Miller
Recipe Introduction
This is one of those dishes Mom makes without a recipe. She finally wrote down the directions so this long time family favorite wouldn't be lost forever. I've made it a few times following this recipe & it turns out nicely. Not as good as Mom's but close. Part of her secret is her huge old pressure cooker that she prepares the beef in.
List of Ingredients
1 lg. Beef roast (She usually uses an English Roast but will use whatever is on sale)
1 Onion chopped
1 Green pepper diced
2 stalks celery diced
1 can Tomato sauce (Oops, I forget which size but I think its the big can. It's the only size I remember having in the house when we were growing up)
Worchester sauce (to taste)
Salt (to taste)
Pepper
Chili powder
Recipe
Brown the beef & cook in pressure cooker until well done. You should be able to shred it easily with a fork. Remove beef from the broth and set aside to cool.
Cook veggies in broth.
Add tomato sauce & seasonings.
Shred meat & add to broth mixture.
Cook down slowly & stir often as it sticks easily.
Serve on hamburger buns and top with cole slaw.
