This is a wonderful cheesy potato soup!
List of Ingredients
1 cup each of the following, diced
Onion
Celery
Carrot
1 Tablespoon Butter
6 cups Potatoes
Water
2 chicken bullion cubes.
1 can cream of chicken soup
1 lb. Velvetta
Recipe
Saute onion and celery in butter.
Add carrot and potatoes.
Add just enough water to reach to top but not cover the veggies.
Add bullion cubes.
Bring to a boil, reduce heat and simmer until potatoes are almost done.
Add soup and cheese.
Continue cooking on low for about 20 minutes,
