Black Bean Salsa

You can substitute other varieties for the black beans, but it won't be as colorful.
List of Ingredients
1/2 ea Bay leaves
1 clove Garlic
2 tsp Cumin
1/4 tsp Red Pepper Flakes
2 1/4 tsp Salt
1 tbsp Lime Juice
2 tbsp Cilantro chopped
1/3 cup Onion diced
1 ea Tomatoes diced
1/3 cup Radishes finely diced
1/2 tsp Garlic minced
1 tsp Jalapeno Peppers or serrano chile
1 cup Black Beans uncooked or 32oz canned drained and rinsed
Recipe
Soak dried beans in water to cover by 2 inches in large saucepan overnight. (To quick soak: Combine beans with water to cover by 2 inches in a large saucepan and bring to boil; boil 2 minutes. Cover and let stand 1 hour.) Drain; cover with fresh water and bring to boil. Add bay leaf, garlic clove, cumin and red pepper flakes. Reduce heat and simmer until beans are tender, 1 to 1 1/4 hours. Remove from heat and stir in 2 tsps salt. Cool beans in liquid. Drain beans, discarding liquid, garlic clove and bay leaf.
Rinse onion in mesh sieve under cold water; drain and pat dry. Combine onion, drained cooked or canned beans, minced garlic, remaining 1/4 tsp salt, tomato, radishes, cilantro, lime juice and chile.
YIELD: 4 cups
