    Blue Cheese Quesadillas w/Peach Salsa

    Peach Salsa (below)
    1/2 cup shredded Monterey Jack cheese (2 ounces)
    1/3 cup chopped walnuts
    1/4 cup chopped green onions
    1 package (4 ounces) blue cheese, crumbled
    8 flour tortillas (8 inches in diameter)

    Recipe



    1. Make Peach Salsa.
    2. Heat oven to 375°F. Grease cookie sheet.
    3. Stir together remaining ingredients except tortillas. Sprinkle mixture over 4 tortillas; top with remaining tortillas, pressing down slightly. Place on cookie sheet.
    4. Bake 8 to 10 minutes or until cheese begins to melt and tortillas are slightly browned. Cut each into 8 wedges. Serve with Peach Salsa.

    YIELD: 32 Pieces

    --- Peach Salsa---

    1 bag (10 ounces) Cascadian Farm® frozen organic sliced peaches, thawed, drained and chopped
    2 tablespoons finely chopped red bell peppers
    2 tablespoons finely chopped green onions
    1 tablespoon lime juice
    2 teaspoons chopped fresh cilantro
    1/4 teaspoon salt


    Stir together all ingredients in medium bowl; refrigerate until ready to serve.
