    1 cup canned black beans, rinsed and drained
    1 medium tomato, chopped (about 1 cup)
    1/4 cup chopped green pepper
    2 tablespoons finely chopped onion
    1 tablespoon chopped fresh cilantro
    1/4 cup olive oil, divided use
    1 tablespoon lime juice
    1/4 teaspoon salt
    1/4 teaspoon ground cumin
    1/4 teaspoon dried oregano
    1 teaspoon crushed garlic
    4 English muffins, lightly toasted
    1 cup shredded Monterey Jack cheese

    Recipe



    Combine beans, tomato, green pepper, onion and cilantro and set aside.

    Whisk 2 tablespoons olive oil with lime juice, salt, cumin and oregano. Add to beans.

    Saute garlic until golden, about 2 minutes, in remaining olive oil over medium heat. Brush garlic and oil mixture over muffin halves. Top with bean mix and sprinkle with cheese.

    Broil 6 inches from heat about 3 minutes, or until cheese melts. Serve immediately.

    Serves 4.
