    Brie: Brie w/Sun-Dried Tomatoes

    List of Ingredients

    8 sun-dried tomatoes, packed in oil
    4 tablespoons grated Parmesan cheese
    4 to 8 cloves garlic, to taste
    2 teaspoons dried basil, or chopped fresh basil, to taste
    4 tablespoons minced parsley
    1 pound Brie cheese, rind removed


    Recipe

    Drain and chop tomatoes, reserving 2 tablespoons of the oil. Mix with rest of ingredients, except for brie. Refrigerate up to one day.

    Place brie on serving platter and spread with tomatoes. Leave at room temperature 1 hour, then serve with crackers.

    Serves 8 to 10.
