List of Ingredients
2 tablespoons butter or olive oil
3 large red onions (about 1 ½ pounds total), half and thinly sliced
2 tablespoons Sugar in the Raw®
½ teaspoon salt
1 small log soft goat cheese, 5 to 7 ounces
1 tablespoon chopped parsley
Thin baguette slices, apple and pear slices
Recipe
In nonstick 12-inch skillet, melt butter over medium-high heat. Add onions, and cook 10 minutes, stirring frequently. Stir in Sugar in the Raw and salt; cook 10 minutes more, stirring frequently or until onion is very tender and caramelized. (Relish can be made ahead and refrigerated up to 2 days. Reheat in microwave on High 1 minute.)
Toast baguette slices. Place goat cheese on a small serving platter. Pile onion relish on the side. Arrange bread and fruit on platter. To serve, spread a thin layer of goat cheese on bread or fruit; top with onion relish.
