    Seafood: Greek-Style Marinated Shrimp

    Recipe Introduction

    "Coriander seeds and thyme leaves give this tangy shrimp its Greek flavoring. The dish takes only minutes to prepare and may be made up to two days before serving."

    List of Ingredients

    1/2 cup extra virgin olive oil
    1/4 cup fresh lemon juice
    1 tablespoon whole coriander seeds
    3 cloves garlic, minced
    1/2 teaspoon dried thyme leaves 1/4 teaspoon freshly ground black pepper
    1/4 teaspoon salt
    1 pound cooked large shrimp with tails intact
    Flowering kale or red leaf lettuce

    Recipe

    Combine all ingredients except shrimp and kale in a medium saucepan. Bring to a simmer; reduce heat and simmer gently uncovered 2 minutes. Add shrimp; toss well and cook 1 minute. Transfer shrimp and marinade to a bowl; cover and refrigerate at least 2 hours or up to 1 day before serving.

    Line a serving platter with kale or lettuce. With a slotted spoon, transfer shrimp to platter; serve with frilled wooden picks.


    YIELD: About 2 Dozen Pieces of Shrimp
