    Marinated Shrimp

    List of Ingredients




    1 pound jumbo shrimp (about 12 per pound) cooked, fresh or frozen
    1/2 cup red wine vinegar
    1/2 cup olive oil
    2 tablespoons lemon juice
    1 bunch fresh dill, cleaned of tough stems, coarsely chopped
    6 large pimento-stuffed green olives, coarsely chopped
    1 medium white onion, finely diced

    Recipe



    1. Peel and de-vein the cooked shrimp, leaving the tails on.

    2. Combine the vinegar, oil, lemon juice and dill in a mixing bowl.

    Add shrimp, toss and add olives and onion.
    Marinate for 3 to 4 hours covered in the refrigerator. Serve chilled on a bed of greens.

    Makes 12 hors d'oeuvres
