    Mini Fillo Shells Filled w/Zesty Chicken Salad

    List of Ingredients

    1 - box (15 shells) frozen Athens Mini Fillo Dough Shells, thawed and
    Chicken Salad

    CHICKEN SALAD:

    1/2 a chicken breast, boned and skinned
    1 tablespoon butter
    a few drops Liquid Smoke
    2 tablespoons finely chopped celery
    4 tablespoon thinly sliced green onion
    4 tablespoons Best Foods mayonnaise
    Zest from one lemon
    2 teaspoons fresh lemon juice
    freshly cracked black pepper, to taste
    Kosher salt, to taste
    1/4 cup chiffonade of arugula or spinach
    2 tablespoons almonds, chopped and toasted

    Recipe

    Season chicken breast with salt and pepper. Drizzle a few drops of Liquid Smoke over the chicken. Saute in butter over medium heat until juices are clear; set aside to cool. Cut the chicken into a very small dice and place in a small bowl.

    Add the celery, green onion, mayonnaise and lemon juice. Adjust the seasoning with salt and pepper to taste.

    Just before serving, add the arugula, lemon zest and almonds to the chicken mixture. Spoon into each filo shell; arrange on a platter and serve.
