    6 bacon strips, diced
    1 large onion, chopped
    1 garlic clove, minced
    1 container (15 ounces) ricotta cheese
    1/2 cup half-and-half cream
    2 tablespoons flour
    1/2 teaspoon salt
    1/8 to 1/4 teaspoon cayenne pepper
    2 large eggs
    1/2 cup sliced green onions

    Assorted crackers and fresh fruit

    1. Heat oven to 350�F. Grease an 8-inch springform pan; set aside.

    2. Cook bacon in a skillet over medium heat until crisp. Remove with a slotted spoon to a plate lined with paper towels. Saut� onion and garlic in same skillet in drippings until tender; transfer with a slotted spoon to a bowl.

    3. Combine ricotta, cream, flour, salt and cayenne in a mixing bowl; beat on medium speed until smooth. Add eggs, one at a time, beating well after each addition. Set aside 3 tablespoons bacon for garnish. Stir green onions, saut�ed onion and remaining bacon into cheese mixture. Pour into prepared pan.

    4. Bake 40 minutes or until center is set. Cool slightly on a wire rack. Sprinkle with reserved bacon. Serve warm with crackers and fruit.

    YIELD: 16 - 20 Servings
