Recipe Introduction
"This dramatic savory cheesecake takes only 10 minutes to prepare and may be prepared up to two days before serving. To develop a nice spreading consistency, let the cheesecake stand at room temperature 30 minutes before serving."
List of Ingredients
10 ounces goat cheese (chevre), crumbled
3 tablespoons prepared or homemade pesto
2 tablespoons finely chopped sun-dried tomatoes packed in olive oil 1/2 teaspoon freshly ground black pepper
1/4 cup finely chopped fresh basil or Italian parsley
Fresh basil sprigs
1 (12-inch) French bread baguette, sliced, toasted Recipe
Combine goat cheese, pesto, tomatoes and pepper in a medium bowl. Mix well with a fork. Line a 4- to 5-inch ramekin or shallow bowl with plastic wrap. Pack cheese mixture into ramekin, pressing very firmly to compact cheese. Cover with plastic wrap. Refrigerate at least 2 hours or up to 2 days before serving.
To serve, unmold cheesecake and roll top and sides in chopped basil, pressing to coat. Transfer to a decorative platter; garnish with basil sprigs and serve at room temperature with toasted bread.
