    Here's an appetizer that's great for summer, and a little different.
    1 1/2 lb. scallops (bay or sea scallops--cut sea scallops into bite size piece.)
    1 small onion, sliced
    White wine
    Put scallops and sliced onion in a saucepan and barely cover with white wine. Simmer for 3-5 minutes. Drain and cool.

    For the sauce:

    1 c. mayonnaise (regular or lite)
    1/2 c. sour cream (regular or lite)
    2 TBS. chopped parsley
    2 TBS. chopped chives
    1 clove garlic, mashed
    juice of 1/2 lemon or lemon juice
    salt & pepper to taste
    Combine the sauce ingredients until well blended.

    Cover the scallops with the mayonnaise mixture and garnish with thick slices of scallion (optional). Serve in cocktail glasses or in one large bowl..with individual forks.

    This is different and is always a hit. Sometimes I add shrimp, mushrooms, or artichokes...or whatever strikes your fancy!
