    Mushrooms: Stuffed Mushrooms w/Clams

    List of Ingredients

    1 pound large fresh mushrooms

    2 tablespoons butter or margarine

    1/4 cup finely chopped celery

    2 tablespoons finely chopped green pepper

    2 tablespoons finely chopped onion

    2 tablespoons chopped pimento

    1 can Snow's Minced Clams, drained

    2 tablespoons finely crushed cracker crumbs

    Dash ground thyme

    Salt and pepper

    Melted butter or margarine


    Recipe

    Preheat oven to 400 degrees. Remove stems from mushrooms. Finely chop stems to measure 1/2 cup. In medium skillet, over medium heat, melt butter, add celery, green pepper and onion. Cook until tender. Add mushroom stems and pimento; cook 3 minutes. Stir in remaining ingredients except butter. Brush mushroom caps with butter. Spoon filling into caps. Place in shallow baking pan and bake 5 minutes or until hot. Serve immediately. Refrigerate leftovers.

    Serves 4 - 6
