    Mushroom Stuffed Beef Tenderloin

    Ingredients
    1 beef tenderloin, trimmed and butterflied
    1 medium onion, diced
    1-2 cloves garlic, minced
    2 tbsp olive oil
    2 tbsp butter
    1/4 cup white wine
    In another pan, combine:
    1 cup fresh mushrooms, sliced
    2 tbsp butter
    2 tbsp olive oil

    Saute' garlic and onion in the olive oil and butter. When onions begin to caramelize, deglaze by adding white wine to hot pan and stir. Allow to simmer on medium low heat.

    With the ingredients in the other pan, saute' until mushrooms are tender, and deglaze with 1/4 cup white wine.

    Combine onion mixture with mushrooms, and add a pinch each of salt, pepper, and parsley. Fill butterflied tenderloin with mixture and tie well, retaining any extra liquid.

    Sear in a large, hot skillet to lock in juices. Rub outside of beef with garlic and olive oil. Set in a roasting pan and drizzle with a hearty red wine. Roast at 350°F for about 20 minutes. Cut into 1-inch slices and top with retained liquid. Serve hot.
