For make-ahead convenience, fix this beverage a day early and refrigerate. Reheat the drink and pour it into an electric crockery cooker to keep warm on low-heat setting up to 4 hours.

4 cups apple cider or apple juice(*)
4 cups apricot nectar
2 Tbsp. lemon juice
2 Tbsp. honey
1 tsp. whole cloves
1 tsp. whole allspice
4 inches stick cinnamon, broken

In a large saucepan combine apple cider, nectar, lemon juice, and honey. For spice bag, place cloves, allspice, and stick cinnamon on a double-thick, 6-inch-square of 100% cotton cheesecloth. Bring corners together and tie with a clean string. Add the spice bag to cider mixture. Bring the mixture to boiling; reduce heat. Cover and simmer for 10 minutes. Discard spice bag. Ladle mixture into cups. If desired, serve with cinnamon sticks.
YIELD: About 10 (6-ounce) Servings
(*) Note: If desired, substitute 4 packets of spiced cider instant apple flavor drink mix (each packet is about 3/4 ounce) and 4 cups of water for the apple juice or cider and whole spices. Stir together; bring all ingredients to boiling. There is no need to simmer for 10 minutes before serving.
