10 oz. Hot, freshly brewed coffee
1 jigger Kahluha or Tia Maria coffee liquor
1/2 C. Freshly whipped sweet cream
1 jigger Grand Mariner
Recipe
Freshly grind and brew (using freshly filtered water) sufficient coffee for all of the Cafes you will need. Each cafe takes 1 1/4 cups of coffee, so if you need 5 Cafes make 5 x 1 1/4 + 1 (for the pot) or 8 cups. for 10 Cafes, 14 cups, et cetera. We prefer an Arabica AA or AAA bean for this. Either caffinated or decaffinated.
In a 12 ounce brandy sniffter, pour the coffee liquor in first.
Place a stainless steel dessert/soup spoon into the sniffter and add the hot coffee. CAUTION!!!! The spoon is important. It helps to distribute the coffee's heat and avoids breaking the glass.
Swirl once to distribute the liquor in the coffee.
Float the whipped cream on top of the coffee and drizzle the Grand Mariner slowly over the cream.
Serve at once on a coaster with a plastic straw for swizzling and a pitcher of half-and-half cream on the side for those that like their coffee lighter.
