    Buns: Hot Cross Buns

    List of Ingredients




    1 tablespoon yeast
    1 teaspoon sugar
    2 cups milk
    1/2 cup sugar
    1 1/2 teaspoons salt
    1 egg, beaten
    1/3 cup butter, melted
    5-6 cups flour
    3/4 teaspoon cinnamon
    3/4 cup raisins

    Icing:
    1 cup icing sugar
    Milk

    Add yeast and 1 teaspoon sugar to 1/2 cup warm water. Let sit for 10 minutes.

    Warm milk and add 1/2 cup sugar, salt, egg and butter. Pour into large bowl and stir in yeast mixture. Add 5 cups flour, cinnamon and raisins and mix well, adding 1 cup flour if dough is too sticky. Knead dough until smooth.

    Cover and let rise until doubled. Punch down, knead briefly and shape into buns.

    Place buns on a 9-by-13-inch baking sheet and slice a cross in the top of each. Let rise until doubled.

    Bake at 325 F for 25 minutes, or until golden brown. Let cool and put confectioners sugar icing in each cross.

    Makes 24 buns.
