List of Ingredients
1/4 cup butter creamed with
1 cup sugar and the 2 beaten eggs, set aside.
On waxed paper sift together:
1 1/2 cups all purpose flour with 1 1/2 tsp. baking powder,1 tsp. baking soda and 1/4 tsp. salt. In a bowl,
add this to butter mixture alternately with 1 cup sour cream and set this aside.
In a small bowl,combine 1/2 cup coconut,1/4 cup packed brown sugar, and 1 1/2 tsp. cinnamon.
Recipe
* Make sure the butter,eggs, and sour cream are at room temperature before you begin.
Preheat oven at 350. In a greased and floured 8 by 5 by 3 loaf pan put a layer of batter then a layer of coconut mixture and then another layer of batter and lastly the remaining coconut mixture. Run a knife through the batter to create a marbled effect.Bake 45 minutes. Enjoy.
For mini loaves: Bake 30 minutes.
