    1-1/4 cups cornmeal

    1-3/4 cups flour

    2/3 cup sugar

    4 teaspoons baking powder

    1/2 teaspoon salt

    2 eggs, beaten

    1-1/2 cups milk

    2 tablespoons butter, softened

    3 apples, sliced

    1/3 cup brown sugar

    1 tablespoon flour

    1 tablespoon butter

    1/2 teaspoon cinnamon

    Recipe



    1. Sift together the first 5 ingredients. Mix in eggs and milk combined with 2 tablespoons melted butter.

    2. Pour batter into a buttered 13x9-inch pan. Arrange apple slices up and down batter in rows.

    3. Combine remaining ingredients and sprinkle over apples. Bake at 425 degrees (400 degrees if you are using a glass pan) for 25 minutes until browned.



    YIELD: About 2 dozen squares
