Golden Potato Bread

2 tsp active dry yeast
1/2 c. warm water
1 tbs. sugar
2/3 c. butter flavored shortening
1 c. warm milk
1/3 c. sugar
1-1/2 c. baked and mashed yukon gold potatoes
1-1/2 tsp. salt
2 eggs
5-6 cups of bread flour
Recipe
First bake whole potatoes in the microwave. After they are cooled peel and mash with a fork, and set aside.
In a small bowl combine warm water(115 degrees), 1 tbs. sugar and yeast.
Let stand for 5 minutes.
Melt shortening in the microwave. Warm milk in the microwave to 115 degrees. In the bowl of a stand mixer add Shortening, milk, sugar, potatoes salt and eggs. Then add the yeast mixture.
Using the dough hook attachment add flour 1 cup at a time until dough becomes smooth. Let the mixer knead on medium for 3 minutes.
Turn dough onto a floured surface and knead just until it is no longer sticky.
Form a ball and place into a well oiled large container(dough will rise up to 3 x its original size). Cover and place in fridge overnight.
---THE NEXT DAY---
Punch dough down and turn onto a floured surface and knead 4 or 5 times.
Divide in half and form 2 rectangles. Roll up each one in a jellyroll fashion and place them seam side down in loaf pans lined with buttered parchment paper.
Oven proof:
Place dough into a 170 degree oven for 20 minutes. Then turn oven up to 375 degrees for 20 minutes. Last turn oven down to 350 degrees for 10 minutes or until golden brown. Remove from oven and cool on a wire rack.
