    1/2 c. yellow or white cornmeal
    1 1/2 c. white or unbleached flour
    1 c. rye flour
    1 c. whole wheat flour
    1 c. brown sugar
    1 c. molasses
    2 tsp. baking soda
    1/2 tsp. salt
    2 c. buttermilk
    1 c. broken walnuts, optional
    1 c. raisins, optional

    Recipe



    Do not preheat the oven for this recipe.

    Grease a Dutch oven size pan or 2 casserole dishes with lids.

    Use a large bowl and place the cornmeal, all the flours, sugar, molasses, baking soda and salt in it.

    Pour in the buttermilk and mix until well blended.

    Add the walnuts and raisins and stir to combine.

    Pour the batter into the pan/dishes and place in a COLD oven.

    Turn temperature to 350 and bake for about 1 hour.

    Use a tester for doneness. If it comes out clean, and dry, it is done. If anything clings, continue to bake for 5 - 10 minutes.

    Remove from the oven and let cool in the pan/dishes for 10 minutes.
    Remove the bread from the pan and place on wire rack to cool.

    NOTE: If using a convection oven, reduce the heat 50 degrees.
