    List of Ingredients




    4 cups all-purpose flour
    1 1/2 cups granulated sugar
    1 tablespoon Clabber Girl Baking Powder
    1 cup fresh shredded coconut
    1 cup coarsely chopped macadamia nuts
    2 cups crushed canned unsweetened pineapple w/juice
    3 large eggs, beaten
    1/4 cup vegetable oil
    3/4 cup buttermilk
    apricot jam - for glaze

    Recipe



    Preheat oven to 350 degrees F. and grease two 8-1/2 x 4-1/2 inch loaf pans.

    In a large bowl, thoroughly whisk together flour, sugar, baking powder and salt. Stir in coconut and macadamia nuts. In a separate bowl combine undrained pineapple, eggs, buttermilk and oil. Stir into flour mixture just until blended. Spoon batter into prepared pans.

    Bake in 350 degree F. oven for 1 1/4 hours, or until golden brown. Remove from oven and cool for 10 minutes; place on wire racks to cool completely before slicing.

    Before slicing, glaze with apricot jam for a beautiful finish.
