    Scones: Lemon Poppy Seed Scones

    2 1/2 cups flour
    2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/4 cup sugar
    4 tablespoons butter, softend
    1/4 cup nonfat cottage cheese, drained
    1/3 cup liquid egg substitute
    1 1/2 tablespoons lemon extract
    2 teaspoons fresh grated lemon rind
    1 1/2 tablespoons poppy seeds

    Preheat oven to 400¼F. Spray a baking sheet with cooking spray. Into a medium bowl, sift together flour, baking powder, baking soda, and sugar. Work in butter and cottage cheese with your hands until dough resembles rolled oats. Mis in egg substitute, lemon extract, lemon rind and poppy seeds. Knead with your fingers until thoroughly combined. With your hands, roll dough into small ggolf ball-size balls, then flatten to 1/2" thickness. Place on prepared baking sheet about 2" apart and bake for 10 minutes or until lightly browned. Serve warm. Makes 16.
