    Sweet: Cantaloupe Bread with Praline Glaze

    List of Ingredients

    3 eggs
    1 C oil
    2 C sugar
    1 Tbsp. vanilla
    2 C canteloupe
    2 1/2 cups Flour
    1 tsp salt
    1 tsp soda
    3/4 tsp. baking powder
    2 tsp. cinnamon
    1 tsp. ginger

    1 stick butter
    1 2/3 C brown sugar
    1/2-1 C pecan

    Recipe

    Beat eggs, sugar, oil and vanilla together. Cut peeled cantaloupe into 2" chunks and puree. Add cantaloupe to mixture. Sift dry ingredients and add to liquid.

    Pour into 2 greased and floured 9x5 loaf pans.

    Bake at 325F for 1 hour.

    Meanwhile, melt butter and brown sugar in the microwave for 3 minutes. Stir every minute. Fold into pecans and pour over warm bread.
