List of Ingredients
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon allspice or cloves
1/4 teaspoon ground nutmeg
1/2 cup (1 stick) unsalted butter, room temperature
1/2 cup light or dark brown sugar
1/2 cup molasses
1/4 cup honey
2 large eggs
1/2 cup sour cream
1 cup mashed bananas (2 large) Recipe
1. Preheat oven to 350 degrees. Grease a 9x5x2 3/4 inch loaf pan with butter, then lightly dust with flour making sure to coat both the bottom and sides of the pan. Shake out excess flour.
2. Sift together the flour, baking powder, salt, ginger, cinnamon, allspice/cloves, and nutmeg into a bowl.
3. In a second bowl, beat together the butter, brown sugar, molasses, and honey with an electric mixer until smooth. Add the eggs, beating well after each addition. Add the sour cream and bananas and mix until combined.
4. Add the dry ingredients into the bowl and mix until just combined. Scrape the batter into the prepared pan. Bake in the center of the oven 55-60 minutes. The bread is finished when a toothpick inserted in the center of the loaf comes out clean.
5. Remove the bread and cool on a rack for about 10 minutes. Loosen the bread by running a knife around the edge of the pan and flip the pan to remove. Allow to cool longer or serve warm.
