    Sweet: Cinnamon Coconut Loaf *

    Recipe Introduction

    * Make sure the butter,eggs, and sour cream are at room temperature before you begin.

    List of Ingredients

    1/4 cup butter
    1 cup sugar
    2 beaten eggs
    -------

    1-1/2 cup all purpose flour
    1 -1/2 tsp. baking powder
    1 tsp. baking soda
    1/4 tsp. salt
    1 cup sour cream
    -------

    1/2 cup coconut
    1/4 cup packed brown sugar
    1-1/2 tsp. cinnamon



    Recipe

    Cream butter and sugar, add 2 beaten eggs; set aside.

    On a piece of waxed paper, sift together flour, baking soda, baking, powder, and salt. Slowly add them to the creamed mixture alternately with 1 cup sour cream and set this aside.


    In a small bowl,combine 1/2 cup coconut,1/4 cup packed brown sugar, and 1 1/2 tsp. cinnamon.

    Preheat oven at 350. In a greased and floured 8" x 5" x 3" loaf pan put a layer of batter then a layer of coconut mixture and then another layer of batter and then the remaining coconut mixture.

    Run a knife through the batter to create a marbled effect.

    Bake 45 minutes. Enjoy.

    Stella's Note: I made mini loaves - I doubled the recipe. Yields 5 mini loaves. I baked them for 30 minutes. Use a toothpick and check center. Great Christmas gifts - what a way to start off Christmas morning! DELICIOUS!!!
