Sweet: Lemon Apricot Bread

In Big Bowl:
2-3/4-cups all purpose flour
1-teaspoon baking powder
1-teaspoon baking soda
1/4-teaspoon salt
1/2-cup granulated sugar
1/4-teaspoon ground nutmeg
In Small Bowl:
1-1/3-cups buttermilk
1/2-cup chopped dried apricots
1/4-cup butter, melted
1-teaspoon grated lemon rind
1-large egg, slightly beaten
Cooking spray
Lemon Glaze:
4-Tablespoons sugar
2-Tablespoon lemon juice
Recipe
Combine first 6 ingredients in large bowl, make a well
in the center of mixture. Combine buttermilk, chopped
apricot, melted butter, lemon rind, and egg in small
bowl. Add to the dry ingredients, stirring just until
dry ingredients are moistened. Spoon batter into a
greased loaf pan (8-1/2-inches by 4-inches). Bake at
350 degrees (Fahr) for 45 minutes or until a wooden
pick inserted in center comes out clean. Let cool in
pan 10 minutes, remove from pan. In saucepan, stir sugar
and lemon juice with a wire whisk and heat until sugar
dissolves to make a glaze. Drizzle on bread with a spoon.
Slice 1/2-inch thick.
